January 8, 2007 I cook breakfast for guests on my deck which overlooks a lake. After a recent conference where I visited the Omelette Chef every morning, (yum) I decided to introduce them to my rather predictable menu. My daughter gave me a non stick omelette pan for Christmas and while scouring the net, came upon your recipe. I just loved the pictures and knew I could do it! My first attempt... no, my second (I added chocolate milk by mistake and decided not to proceed) was outstanding. The edges are the key and it all went as planned. I look forward to more success and maybe some experimentation. As for the chocolate milk? maybe you could let us know. Chef Dennis Wagga Wagga Australia December 11, 2006 Hi there! I thought I'd add to the slew of emails you get about your omelette instructions. I've been craving a veggie omelette for weeks! Never have I thought I'd be able to achieve a perfect omelette on my own. I'm more of a baker, you see. I googled and found your page, however, and gave it a try. It turned out insanely perfect. I'm prouder than a peacock! ;) Used 3 eggs, no milk, no butter. Fillings were colby jack cheese, fresh chopped veggies (mushrooms, roma tomato, white onion, green onion), and jalapenos. All topped off with salsa. Thanks for the help! H. from Houston November 10, 2006 My mom was craving an omelette, so I decided to search the internet for instructions on how to cook one. I've made several attempts in the past, and they came out... well, ok. I think I found your website at wikipedia.org, and I was very impressed with the fact that you had lots of pictures. Following your advice, I made my mom and myself PERFECT omelettes thanks to your excellent instructions! I like Western style omelettes, so I used canadian bacon, onion, green pepper, tomato and cheddar cheese. My mom wanted the same ingredients, but with mushroom added in hers. Mmmmmmmmmmmmm.... :-) David October 31, 2006 ...In the past, I have always made runny omelettes that were burnt. I could never figure out how to fold it over right without it falling apart, but now I see that I was simply not waiting long enough for the omelette to cook, and not using cooking spray, either. Knowing someone, for some reason, would make a page like yours... Anyway, I'm about to make the omelet and wanted to thank you for the recipe. I couldn't have found better instructions with pictures. Now let's hope this works well with egg beaters which im sure you call "craziness", but thats my diet. :) I'm 37 and have been using the internet before anyone I know and I'm still amazed that I'm learning to make an omelet 3 minutes after I got the idea, from someone in Texas. thanks! I had never made an omelete before and your website was great comfort. Unfortunately, when I attempted to make the omelete, I forgot to spray the pan and ended up with a yummy scrambled egg and veggie dish. Well, it's been some time now and I've had your website in my head. I have been craving an omelete and tonight I finally had the gumption to actually make one! I found your website easily again on google and thanks to you, I just made a perfect omelete on my first try ever! The only thing I did wrong was that I filled it too full! That was okay. I don't know why, but pepperoni was the first thing I thought of other than cheese, and it turned out really good.
